Past visits to this hot spot have been satisfactory for my companion and I. Food was good, service was prompt and we left with little or no complaint. Our most recent experience was POLAR OPPOSITE! We showed up at 7:30 on a Sunday night and the place was packed. There was a couple at the bar waiting for a table when I approached the host station. It took a while before one of the scurrying servers came to greet me, or shall I say, scream "5 MINUTES!" at me. So we sat down. A few more groups came in and someone finally came to take down names. Apparently no one believed we had actually been there a while before the others and were passed over twice for seating. When we were finally in a booth, at 8:10, our drink order was taken and we never saw the server again. At 8:30 we decided to leave. My companion and I spent the last 15 minutes of our dinner break time at Taco Bell where we were served promptly and without error. It was cheaper too.

Nice review Bryce :) Love it. Get the Beef Pho with extra veggies. Plus an order of shrimp spring rolls. $11. Great price

Went for the first time since moving here recently. Really fine Pho--my personal baseline for evaluating--beautiful hints of herb, nice stock. Food for the soul. Agree that service isn't the most attentive, but it wasn't lacking to any significant degree. Better than hovering.

Chez Thuy has always had bad service. It is cold and offering the bare minimum at best. I am glad that other reviewers mentioned this as well. I recently went to Chez Thuy since their remodel/construction. I didn't notice any difference inside, but the food changed. I ordered the stand-by Pho, beef noodle soup. It was horrible. I don't think there was any anise in it at all. There was hardly any flavor. Very disappointing. Of course, I could not tell my server about it, since I never saw him again. While I was there, I noticed that the person behind me got the wrong order, and had to stand up and flag someone down to get him the correct food. The person in front of me had to stand up and flag someone down so she could get a to-go box. No one paid attention to her until she walked over to the supply stand to assist herself! Of course, they didn't do more than look up and let her continue to get her box and pack the food herself. I also had to do the same. The arrogance and laziness of this wait staff is perplexing. There are so many great restaurants in this town, and many in the metro area serve Pho. I would recommend those other places until Chez Thuy stops taking their customers for granted.

I've eaten at Chez Thuy several times, and I've had a good experience every single time. Although I did sometimes find the service a little lacking, the food was so good that I didn't mind. The prices are a little higher than many Asian restaurants, but I think the extensive variety of the menu makes up for it. Last time, I tried their Pad Thai (not a Vietnamese dish), and I think that I will stick to the traditional Vietnamese dishes next time. The Pad Thai actually didn't really taste like Pad Thai. But it was not bad.
